It’s a new week and I’m back with another cheerful summer inspired recipe that you’re going to jump for! We actually just arrived back home from our first short staycation of the summer and while it’s nice to be home I can’t wait for staycation #2. My little family of 4 has 3 staycations planned this summer… living in the Orlando area totally has its perks. I stop to snap photos of the greenery, fresh flowers and palm trees at almost every spot we go. I can’t resists a bright photo opportunity. We typically do vacation in the late fall but this year we decided to give a bit more attention to the fun to be had in the summer months. Aside from staycations I’m all about a summer inspired recipe you can whip up at home and these rainbow cookie blondie brownies are the bomb. Do people still say the bomb or I have I reached a new age bracket there?

Keebler Chips Deluxe Rainbow cookies are pretty and yummy and they totally scream summer with those cheerful colors involved. While making this recipe I suggest sampling a few cookies, it’s highly recommended (wink).

Summer colors are easy to find in our home and surroundings. So let’s take that gorgeous cookie above and dive it into a brownie, how does that sound?

Shopping Items and Recipe Ingredients:
- 1 cup of flour (all-purpose)
- 1/2 tsp baking soda
- Dash of salt
- 7 Keebler Chips Deluxe Rainbow cookies
- 1/2 cup of chocolate chips
- 1 cup of brown sugar
- 1 egg
- 1 tbsp vanilla extract
- 1/4 cup of melted butter
- Kellogg’s Original Rice Krispies Cereal (for breakfast, of course)
- Preheat oven to 350
- Combine flour, baking soda, salt, brown sugar, melted butter, egg and vanilla extract.
- Mix well.
- Using a ziplock bag crush 7 cookies with your hands leaving the cookie pieces to miniature pieces, no need to completely crush them then set aside.
- Combine batter with crushed cookies and chocolate chips.
- Mix well.
- Grease an 8×8 baking dish.
- Pour batter (it will be sticky) into the baking dish. Top with additional chocolate chips and cookie crumbles- optional.
- Bake for 30 minutes or until golden brown.
- Allow the brownies to cool then slice and serve.
