Fudge is one of my husbands favorite sweets. He recalls his aunt making it often as a child and said not many can make it like she does. I didn’t want to attempt to make her chocolate fudge but I thought I could try my hand at peanut butter fudge with a small twist. The results? He said it was delicious and the closest to his aunts he’s had in years. Yay me! Now his grandmother’s red velvet cake is something I simply can’t replicate… she had a magical touch with that dish.
Our last coffee date with a summer lake side one, but I couldn’t go long without another dose of coffee creamer in my life. Sweet Cream Peanut Butter Fudge
1 stick of butter
2 cups of brown sugar
1/2 cup of milk
1 tbsp sweet cream coffee creamer
3/4 cup of peanut butter
1 tsp vanilla extract
3 cups of confections sugar
Bring softened butter and brown sugar to a boil in a sauce pan.
Add in milk and coffee creamer. Stir.
Remove from heat.
Add in vanilla extract & peanut butter. Stir.
In a large mixing bowl add confectioners sugar. Pour mixture into confections sugar and blend until all lumps are gone and the texture is creamy and smooth.
Pour into an 8×8 dish.
Refrigerate until fudge has hardened.
Serve cold and enjoy!
