Happy Friday! Woohoo, we made it through another work week and now it’s time to treat yo self.
These cookies are the best cookies I’ve ever made. I mustn’t tell lies so this is a true story (catch the Harry Potter reference?). I’m a big fan of shortbread cookies, pecan sandies are a favorite, so I knew I would enjoy these cookies but I didn’t expect to blow my own mind. The hint of lemon and tiny bite of rosemary offers the perfect balance.
Rosemary Lemon Shortbread Cookies Recipe
3 cups of flour
2 sticks of unsalted butter (softened)
3/4 cup of sugar
1 tbsp lemon zest
1 tbsp chopped fresh rosemary
1 tsp vanilla extract
Preheat oven to 350
Combine flour, sugar and butter until fluffy
Add lemon zest and fresh rosemary
Add egg and vanilla extract
Mix the dough until it forms, be sure to not overmix
Place the dough on parchment paper and flatten. Cover exposed dough with additional parchment paper.
Place dough in the fridge for 30-45 minutes.
Remove dough from fridge, remove parchment paper and cut dough into squares.
Place on baking sheet and bake for 10-15 minutes or until bottom of the cookies are slightly golden
Cool and enjoy!
