It might not technically be summer just yet, but it totally feels like it here in Florida. My body & mind say summer is here, so summer is here. Now that we’ve covered that we can dive into a favorite summer treat of mine- key lime pie!
We usually take an annual trip to the Florida Keys (lucky for us, it’s a driveable destination). During my pregnancy we skipped our annual trip and with baby we will be skipping again this year. I’m not bummed about missing our trip because baby trumps all, but I will still need to get my key lime fix! I usually stop for key lime pie on a stick while visiting the southern most point. Key lime pie on a stick which you can get covered in chocolate is the bomb.
To supplement my annual Key West key lime pie on a stick fix I whipped up the easiest key lime bars ever!
These bad boys are ridiculously easy to make. I said I was just going to have 1 a day and I devoured the entire lot in 3 days! The husband is not a fan of key lime or anything tart. Darn.
Grab the printable key lime pie bars recipe below and enjoy one of my favorite summer sweet treats.
- 1 1/4 Graham Cracker Crumbs
- 1 can of Key Lime Pie Filling
- 1/4 cup sugar
- 1/3 cup melted butter
- Combine graham cracker crumbs, sugar and melted butter.
- Line a 9×9 pan with the pie base
- Bake at 375 for 10 minutes
- Spread pie filling over pie base
- Refrigerate overnight
- Serve and enjoy!
