Ok, so I sorta like coffee cake. I have a thing for coffee so it’s only natural that I’m all about trying and creating different coffee cake recipes. A few years ago I had my husband join the coffee loving train and he’s all about it now. He looooved this sour cream cinnamon streusel coffee cake and enjoyed it a few mornings in a row. I’ll be making this one multiple times. Nothing beats staring a morning with a cup of coffee and a warm coffee cake with an icing drizzle. Have I made your mouth water yet?

Sour Cream Cinnamon Streusel Coffee Cake2 1/2 cups flour 2 1/2 tsp baking powder 1/2 tsp sea salt 1 1/2 sticks unsalted butter at room temp. 1 1/2 cups sugar 3 large eggs at room temp. 1 3/4 tsps vanilla extract 1 1/4 cups sour cream
Preheat oven to 350. Spray your baking dish with vegetable oil. Sift flour, baking powder and salt. In a separate bowl combine butter, sugar, eggs, vanilla and sour cream until well blended. Add in the flour mixture slowly. Create your streusel mixture.1/4 cup light brown sugar 1/2 cup of flour 2 tsp cinnamon sugar 1/4 tsp sea salt 3 tbsp unsalted butter cut into cubes
Combine the dry ingredients and cut in the butter. Mix until you have an ideal crumb streusel blend.
Combine half the cake batter in the baking dish and spread evenly. Sprinkle half of your streusel blend over the batter. Pour the remaining cake batter in and top off with the remaining streusel blend. Bake for 1 hour and allow to cool for 30 minutes. Create your icing topping (optional).3/4 cup of confectioners sugar 3 tbsp honey 2 tbsp water
Combine all ingredients adding additional water if needed. Using a spoon or spatula drizzle the icing over the top of the coffee cake. Serve warm with coffee and enjoy! (Recipe adapted by Back In The Day Bakery)
