Happy Monday! It’s a new week and there will be a little more chatter about the shop but the week deserved to be kicked off with a snack that you’ll totally love.
I’ve been wanting to try baked (roasted) chickpeas for awhile now. My sweet friend Carrie shared some awhile back and it sorta made my mouth water. As a hummus and chickpea fan I heart these little guys. I can eat them from the can and loooove them in a salad. Anywho, this easy and delish snack blew my mind and I see them being a regular snack I enjoy. They might seem a little over cooked but they’re a crunchy perfection! Baked Chex Mix Chickpeas
Ingredients: 1 can of chickpeas, 1 packet of chex mix party mix, olive oil
Preheat over to 400. Drain and dry chickpeas, make sure they are completely dried. Mix dried chickpeas and chex mix party mix in a bowl with 1 tbsp of olive oil. Line mixture on a baking pan and cook for 30 minutes stirring chickpeas every 10 minutes. Let cool and snack away!
