Happy Memorial Day, friends! I’m sure many of you are enjoying this day poolside or lakeside. We are soaking up this long weekend. Hanging outdoors with our favorite people is something we try to do as often as possible, especially during the spring and early summer months. Less people running in and out of your house and actives like volleyball, corn hole and swimming make poolside entertaining the best.
Smithfield baby back ribs are the perfect dish to show off with your favorite people while soaking up the gorgeous weather. I’m sharing a dry rub rib recipe with grilling tips from my go-to grill expert, dad.
Poolside cooking doesn’t require much and friends and family are easy to please with the basics. When it comes to grilling, our favorite sides include baked beans, a fresh salad and plenty of drinks! To make things even easier we have friends bring over their faves too; pasta salad, chips and brownies usually make an appearance. These grill friendly meals are perfect for summer pool parties, Memorial Day entertaining, 4th of July celebrating and of course birthday parties too.
Dry Rub Ribs Recipe and Poolside Entertaining
Smithfield/Farmland Pork Ribs
1 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp brown sugar
1 tbsp salt
1 tbsp ground pepper
1 tsp cayenne pepper
Combine all dry ingredients and rub over ribs. As photographed below if your hands are messy you’re doing it right. Allow ribs to soak in the spices overnight.
Grill your ribs (poolside is preferred, wink). Cook the ribs on the grill for approximately 30 minutes then wrap your grilled ribs in aluminum foil. While your guests enjoy the pool and outdoor activities, head in and bake your ribs in the oven at 350 for 45 minutes. The ribs will pull from the bone and be absolutely perfect. Bring your grilled and oven baked ribs back to the party and enjoy!
I’m thankful that my dad is a grill master and so is my husband. Dad is who we call with any grilling questions and he’s ready to give tips when he can. I would have never known to pull the ribs off the grill to bring to the oven for faster cooking. Totally genius!
