Date night in is my favorite. Don’t get me wrong, getting dressed up and going out to eat is nice but being in the comfort of home always wins. This time of the year is ideal for date night in, the sun seems to stay up awhile and we have a great view of the lake. I whipped up a new meal we’ve both been wanting to try, turned up the music (I highly recommend City and Colour for date nights) and we enjoyed a fancy evening in.
Being that I truly enjoy trying new recipes, I’m thrilled to share our upscale yet simple recipe with Tyson. With spring upon us and summer right around the corner I made sure we had a festive sip on hand for date night. It doesn’t have to be wine to be enjoyed from a wine glass so make sure they’re out even if it’s just sparkling water you’ll be sipping on. I prefer a cheerful display for dinner meals so adding in flowers and colorful napkins is an easy way to add in a mix of color.
Last week I was all about the lemons, remember? I’m still all about the lemons and they paired perfectly with the Tyson chicken. PERFECTLY. My husband was totally blown away by the flavors from this dish and that’s saying a lot.
Date Night Hummus and Lemon Chicken Recipe
Tyson Chicken Breasts Roasted Red Bell Pepper & Garlic (make sure to grab a bag from Sam’s Club in the frozen foods section and be on the lookout for a demo 5/10 at your local store)
Hummus (store bought or homemade)
Recipe: Heat oven to 425. Dice 3 red potatoes and cut one lemon. Line the bottom of a baking dish with your potatoes and lemons then mix in 3 tbps of basil and 1/4 cup of olive oil. Place a few pieces of Tyson chicken breasts on top of the potatoes and apply a coating of hummus to the top of the chicken. Cut another lemon in half and squeeze lemon juice over the entire baking dish. Bake for 45 minutes. Serve to your sweetheart and enjoy a simple yet upscale meal for two!
